Tax Party


A few thoughts on paying taxes,

1.     This is tedious business (at least the state of Indiana has WAY complicated forms)
2.     Who had the wherewithal to develop such complex formulas, terms, forms, steps, deductions, ect - I am seriously impressed. I think we take a lot of things like this for granted. People some where a long the line came up with the complex ways to make sure that the government functions (sort of).
3.     My dad is always saying things like, “if you are able to pay taxes, you are lucky to be making enough money to live.” I think he’s right. Some day, when I have a grown up job, I’ll be happy to contribute to the better functioning of society. Until then, I'll take my refund!

Nathan and I had a tax paying party. We gathered all of our forms and spread out at his dining room table. We enjoyed scrummy tuna casserole, rhubarb/apple crisp, and grown up hot chocolate!


Tuna Casserole


(part Mom’s recipe, part tastytuesday.com, part me)

3 cups uncooked pasta
1 can chicken broth
1 can water
1 to 2 cups frozen peas
1 medium onion
1 can cream of mushroom soup
1 cup milk
1 large can of solid white albacore tuna
1 cup shredded cheddar cheese

Preheat oven to 375 degrees

In a sauce pan or skillet
1.     Bring chicken broth and water to a boil
2.     Add pasta and cook until slightly undercooked (9-10 minutes)
3.     With about 2 minutes of cooking time left, add the frozen peas (most of the liquid should be cooked off at this point)
4.     Drain any remaining liquid

In a large fry pan (oven proof if possible)
5.     Lightly brown onions.
6.     Add cream of mushroom soup
7.     Then add milk, cook until milk is well incorporated into soup
8.     Drain tuna and then add it to the soup/milk mixture – break it into smaller pieces if necessary.
9.     Add drained pasta and peas to mixture.

If the fry pan is not oven proof, transfer to a casserole dish.
10. Mix half of the cheese into the mixture.
11. Sprinkle the remaining cheese on top.

Bake for about 30 minutes or until the cheese is lightly browned bubbly.

Theme: P

Last night's dinner theme: P. It was a total accident, which is why there is not a photo to go with it.

I came home from work late last night. So Nathan so lovingly made me dinner. One of my friends had given me some delicious fresh homemade PESTO. So Nathan made some PEAS and PASTA and mixed in the PESTO. He also made chicken - which we decided would have to be called by its Spanish/Italian name POLLO to make it an all around P dinner. Tasty. I'll work on the pesto recipe for you all.

I think the best part of our accidental P dinner was coming home to it made and ready to eat. I'm so used to cooking dinner for myself or with Nathan that it was such a treat to have dinner made for me!

Love Is In the Air

Love is always in the air in my house, but it's been exceptionally clear these past few weeks!

I had so much fun making my home love filled with time with friends and Nathan and of course with CRAFTS.

First I made cards:




Then I made blocks. They aren't all the same size - but floral foam is very is hard to cut in straight lines. I was inspired by some blocks I saw at hobby lobby - but they were too expensive. Next year I may try to make some new ones - these aren't my favorite.


I had an empty shelf on the wall, so I made it my holiday shelf (I may just keep Valentines up a little longer before I put up St. Patrick's Day) and it was the perfect place for my blocks.



I added a few more little do-dads and called it good!

Dinner of Cakes

So last week I made a carrot themed dinner. I would have posted a photo - only I didn't know "themed" dinners were going to become normal. A few nights ago, Nathan and I had a "cake" themed dinner. The theme was inspired by a recipe I found for zucchini cakes - think patty. Dinner tasted good even though it looked a bit strange!

The menu:

- Zucchini Cakes (with horseradish sauce)
- Salmon Cakes
- Potato Cakes









The results: So, that many round things on a plate is a little bizarre looking! And the amount of oil used to fry everything was a little disturbing.

The only thing that really held together were the salmon cakes. I think perhaps I didn't squeeze enough liquid out of the zucchini  - and I think maybe I shouldn't make mashed potatoes so creamy when the end result is supposed to be a cake.



The modifications:  We combined the left over zucchini with the mashed potatoes - DELICIOUS. I may  just make mashed potatoes with zucchini in them just because!

Nathan wants to try layering the cakes into a "burger." Judging by how well the flavors blended on my plate, I think it could just work.







Dessert:  We had some left over pound cake so Nathan decided we needed to continue the theme of "cake" and topped the pound cake with Nutella, bananas, raspberries, and whipped cream. YUMMY!
